What is Header and lift in Sailing?

Wind shifts relative to a boat's course: a header forces the boat to bear away from the mark (often a cue to tack), a lift lets it point closer to the mark. Playing shifts correctly is the essence of upwind tactics.

Example: He tacked on each header and sailed the beat in two fewer minutes.
